    I bottled this six days ago, 👍👍. It's a mix of American and British ingredients using what I had on hand. I'm calling it American brown because of the hops.

    Once the boil is done I seal the lid to the pot with plastic wrap and put it down in my cellar overnight; works great.

    No, but a 20-30 minute boil costs very little. Maybe it adds a couple of dollars. Still way cheaper than $5-7 per pint at a pub.

    Use whatever grainbill you like and ferment with whatever yeast fits the temperature you have. I generally brew British style ales year round and the only temperature control I have is whatever my cellar is. I've brewed some delicious stout with lager yeast.

    2.5 kg in 11 liters would give you around 5% without having to mess with any adjuncts.
