    Replacing Acid Blend / Citric Acid with Grape Concentrate

    I think the grape concentrate is used to add "vinosity" (Webster: the characteristic body, flavor, and color of a wine). There is some nutrient present (how much?) but I would think a teaspoon of citric acid won't do any harm if the berries are not acidic.

    Taster bottle of my attempt at a Coriander Saison recipe, this one without coriander. Very nice fruity type aroma coming off, fruity taste, citra seems to complement, and still nicely malty. I'm impressed, might do another small batch soon, this time with pale malt as Saison is normally lighter...

    That's a very good question - depends on the foreign made contents I suppose.     The temp for the first one (w/coriander) was between 16 and 20C - we just had that frosty weather so moved it to an upstairs bedroom, in the end it was a steady 20C for a couple of days. But no issue, Second batch I also left upstairs that was 20C throughout, but again it's still a passable...
