    Hmmmm, interesting, I don't think it's astringency, i've just looked it up and the things that can cause it I'm not doing, I'll look into it more closely, maybe that is part of the problem. Don't get me wrong, my beer is always pretty good, if I could sort this out, it doesn't happen every time...

    Brilliant, many thanks for this info............so i'll add more gypsum and add both to the mash keeping 1/2 tsp of CC, and there is no need for a campden tablet :) Adding to the mash, is that right at the start when adding the grain or after the mash has finished but before the boil ???

    The bitterness doesn't fade with age, the beer is still decent but with the bitter edge. My recipes are deliberately aiming for almost no IBUs so I can't work out why I'm getting the bitterness ?

    I've noticed that a few of my hoppy beers are tasting a little too bitter which is strange because I never add hops at 60 minutes and generally just add a few at 5 mins then flameout, about 65c for 30 minutes then a biggish dose of pellets for a 3 day dry hop. What would be making the beer...

    Hoorah, glad your beer turned out well acheers. I brewed a NEIPA on Friday using Voss and the recipe at the top of page 72 on this thread, nearly finished fermenting and smelling great.......................

    Personally my two brews have fermented out after 3 days, I then dry hop on day 4 for 3 days and bottle on day 8..........they then carbonate in the bottles really fast at room temperature in about 2-3 days, ready to drink any time after that..........

    Quick question..........does the hydrometer reading alter depending on the temperature of the wort ??? On my 1st Kveik brew I fermented at about 38c and took my reading at that temperature, like you I then let it drop after it had finished to dry hop at about 18c, then took my final gravity...

    Do BiaB, much better quality beer and you can make your own recipes :)

    Why brew so much, do like I do and brew smaller batches, 10 lts gives about 15 bottles, that way you can try different recipes and if you don't like one too much you've only got to wade through a few bottles...........you can also brew more often.
