    Sanitising - How anal about it are you?

    I would say I'm pretty careful about sanitation on the cold side. Hot side I'm happy for the bits and bobs to be visibly clean. I figure a 60 min boil will take care of all the potential nasty bits. Not sure how fastidious you have to be on the cold side or if it is just "the done thing" in all...

    I think that is the way to go. A bit of patience never killed anyone. Im starting to think more and more that it probably is a bit young and could do with mellowing with age. Its not so bad that you would put it on your chips so we should be fine athumb..

    Exactly this. Great for easing you into mash/sparge/boil/yield volumes. Also just the general reference tables like priming sugar or yeast substitutes. I know you can find it all online, but this book is great to have to hand on brew day. Also the American IPA is stonkingly good :beer1:

    I've just joined and am relatively new to brewing too. For what it's worth I definitely recommend the Greg Hughes book. All my recipes so far have come from that and with yhe advice it gives all have been a great success. That said, I'm from Paisley and would therefore drink anything....

    There definitely is a sweet after taste, like at the back of your mouth, more than likely the added sweetener which I doubt was fermentable. There is just an almost sour tang to it. Pretty sure there wasn't any infection as there were no visible signs of nastiness. It may just need longer to...
