    I would want to keep the tap sanitary so either immerse in sterilizing solution or fill to a level below the tap and use towels or similar to wick the solution up the sides where the tap isn't.

    Regarding your temperature control you can always place your fermenter in a larger trug of water or cover with a damp towel and possibly aim a fan at it to stop things getting too out of control in warm weather.

    I'd say as big as you can get or fit in, including depth. I had hops off my potted prima Donna the first year but they got neglected and dried out the following 2 years, I'm trying to look after them this year but it's probably too hot for them up against the brick wall where they currently sit.

    I have a 5 litre keg from Maltmiller and find that using it together with 19 Litre corny kegs gives me lots of options, the main benefit for me is I can split a 23 litre brew between the 5 and 19 litre kegs then I ussually drink the 5 quite young and let the bigger keg age a bit.

    I Do yes, you have changed my mind about using sugars, I shall use them more often from now on. The Mild is just what I was hoping for, ideal to have in the garden on a hot day without feeling guilty I'm consuming too much alcohol.

    Kegged my Mild today after just 7 days, ended up using the Belgian yeast but I enjoyed my sample 1/2 pint Mild, I'm calling it "Mild Thing" May well start another Mild later this week (or next)

    I've also been using golden syrup and also molasses in my most recent beers in place of sugar. I've tended to avoid the recipes using sugar in the past but decided to give it a try as it was used a lot in historic recipes and I'm wanting to stretch my current stock of grain that much further.
