    A 7.2% kolsch?! :) Yeah I pitched it last night at 11.30pm (don't ask). It's not really doing much still. I did read it had a bit of a long lag time getting going. It's above a black pilsner which is 15c in the thermowell (under pressure). Ambient around this FV is about 17c. Finger crossed

    Harvested S04 v Nottingham dried

    How strong is it? A single packet of Nottingham will eat anything and finish at 1.010 almost every time. It's not fav yeast for a stout as I find 1.010 a touch dry for a stout. I'd use the s04 personally. I still love Nottingham for ipas though.

    Anyone got any feedback on this yeast? I've just ordered some so dunno what to expect. Pitching rates, temps, behaviour? Some is going in a wit with some citrus peel.and some in a neipa. Wit won't be above 1.050 and the neipa maybe around 1.063.

    Yes but that is all I wanted. It's preferable to my murphies one that just gave a few numbers and general guidelines for a few styles. I don't brew those styles very often tho. Figured I'd get a more detailed report and work it out myself.
