    It sounds as though you've done everything right. You've got carbonation. I'd put it in the shed and let it continue with secondary fermentation for a few weeks until the weather is fine and it's ready to drink!

    I've used a pressure washer on filthy bottles. Stand them in a crate and give each bottle a good blast.

    I get water from a nearby spring. Locals use the water as it's 'pure' in that it has had no treatment. But it is very hard. So I use it one part to two parts RO water to bring down the CaCO3 content. Makes good beer!

    Mine has turned out well. I put the 23L of completed TC into a bottling bucket and added 3L apple juice and a solution with 140g dextrose (for a bit of a zing) before bottling. We are drinking it now - it's excellent!

    Wear two fleeces! Seriously tho, the Grainfather fermenter was struggling. There was a temperature profile of 2*C between the readout from the thermostat (near the bottom of the FV) and the Tilt at the top.

    In the past when I was short of bottles I used hot water and a scraper, then neat Fairy Liquid on a stainless steel scrubber, washing that now and again too. They are the worst - same with Wadsworth (who apparently contract brew the Proper Job). I recycle these bottles now.

    I tasted my sake today and found it not to my liking. It's a bit sour and I can taste the rice. But maybe that's what it's supposed to be. Adding a bit of ginger sounds good to me.

    My daughter in law (who had a couple of bottles for Xmas) says it tastes like Sake'...😁 adding that there was a haze of rice in suspension. I think that's cleared now. I'll do a taste test tomorrow!

    So 5L in an hour, which #chrisb8 also achieved. What to do next? Just turn off the supply and pack it up? Should I flush through first? I was planning to store it in the 'brewshed' but I'm worried that if it freezes it will get damaged. Perhaps hide it under the bed in the spare room... 😁

    OK, I've just tried this approach with a fermenter containing 20 litres of stout. Mostly in 330cl bottles as I find at 6.5% it's a sipping beer. I've put a towel over the crates in case of gushers 😄

    Thanks for the practical advice. I've been letting the pvc tube splash beer into the bottling bucket and so introducing lots of oxygen. That, and lousy hard water might be behind 'less than satisfactory' results I've had.
