    Ah..course, multiple malts makes it by definition NOT a SmASH to start with....doh! As I only have a 15L kettle and don't want boil overs due to over filling it- I am guessing a top up in FV instead of extra mash or sparge water is okay at a push?

    Other than actually putting the probe in the beer which can lead to all sorts of infection issues; I think the probe in contact with FV and insulated is as accurate a method as you can use. I did this with my first ever brew fridge fermented beer (bottled last night!)

    Hop additions

    I have just brewed an IPA (fermenting now) with Citra and Cascade and I didn't add my bittering hops (Magnum) until 20 mins before the end then 10, 5, and below 80c. I'll also dry hop for between 3-5 days. Will be first time I have "late hopped" so will be interesting to see how it goes.

    These 2 are my regular glasses- the Teku for 330ml bottles, and the Moor glass for pints / 440ml. Before that I tended to use a Brewdog "Jackhammer" glass which is good for bottled IPA's.
