    Ok if I can do that, that makes sense. You'll have to forgive my ignorance - there's a lot to pick up - I'll have a look at how to do that.

    Thanks for the several bits of advice there. It's easier in a way to keep it in the fermenter, as I can keep the temperature nicely controlled. But I was worried about ending up with unpleasant tastes from the cake at the bottom. I shall read up on the diacetyl rest as I've not heard of that before
