    So, I bumped up to 19C around day 5 when the gravity was around 1.028. Now been sitting at 1.011 for a couple of days, and at that 19C for 3 or 4. I think that's long enough for the diacytel rest so tomorrow I'm going to crash it down to 10C, add some gelatin finings and then crash it further...

    If you have more of the sugar that is fully fermentable, then the yeast will convert more into alcohol, so you end up with a drier taste, less sweetness and so other flavour additions may shine through. Basically, the achievable final gravity is lower, so there is the potential for less sugar...

    If you are using the Grainfather pressure transfer kit, did you work out how to connect it to your regulator? All my pipework is 3/8" but the grainfather gas lines are much smaller

    Starting gravity 1.052 so allowing for error, basically spot on! Was my most straightforward brew day so far Colour looks about right to me - that sample is a little cloudy as it has come off the tail end of the grainfather but it was mostly very clear. Will update as fermentation progresses...

    And....disaster. Keg is in an old fridge and the tap has somehow gotten knocked on and completely drained into the fridge and over the garage floor. Unsalvageable. Gutted.

    Tasting okay after kegging on Saturday at 1.2bar. Only issue is my tap which is only giving me a trickle- can decide if it is the tap, connector or something else with the keg. But it means no head develops on the beer at the mo, which is visually disappointing
