Peebee, what did you make and how many sachets did you use? I've tried it in a clone of pannepot which I made with my brother and it was alright. I think we used 3 sachets for that as it was very strong.
Ive heard people say this takes time to come good. Hopefully the pitching rate will make...
Work has got in the way of brewing lately but with things getting quiet for January I managed a brewday this week.
I wanted something similar to De Ranke XX Bitter which is a Belgian blond with tons of bitterness as the name suggests. I took some advice about the hops and yeast from an article...
I've always found my brew to lack a certain sweetness and body compared to professional brews. I've found the same with other home brewers too. Less body and sometimes what tastes like oxidation masking those really sweet flavours.

From what i understand Gordon's gold is basically the Belgian equivalent of Tennents super. It's the tin I've seen most in the gutter out there or thrown in a hedge. Let's face it, nobody needs a pint can of sickly 10% beer unless they've hit the skids. On the other hand the same brewery does...
Two commercial beers made my year
The first was Paix Dieu. It didn't get rave reviews all round but it's right up my street. A very rich 10% tripel with that lovely honey and marzipan flavour. It's rare to find something that strong that's so delicate.
The other was La Bavaisienne. An...
I've found that when I aim for a certain IBU it's always a bit lacking. I think we get the crap end of the hops as homebrewers or maybe it's our technique letting us down.
Don't leave the blowoff tube connected when you cold crash your beer meaning that 2 week old standing water gets sucked in. Had this happen and chucked the batch rather than risk it.
Earlier in the year I started racking to secondary with a blow off connected and did the same thing. Will I ever...
I've been sampling the fruits of my Christmas road trip and can recommend these:
Gouden Carolus Classic and Tripel
Paix Dieu
Brasserie De La Senne Bruxellensis
Dupont Avec Les Bons Voeux / Biere du Miel
Bon Secours Ambree
De Ranke XXX Bitter
St Bernardus Watou Tripel / Abt 12
Caracole...
I use the SS Brewtech one with the thermowell and it's awesome. It comes with a thermometer that plugs in but I plug the probe from my STC1000 into it instead so I can get a reading of the internal temp. I'd highly recommend this bit of kit.
I've seen quite a few people fit them in under...
I think the hop taste has changed but I can't work out if that's my palate or the beer. It seems less crisp now and more musty.
I think it depends on the hop harvest each year though. There have been years where home brewers say certain hops taste a bit crap and have the onion taste I keep...
Brett can take a lot of time. I tend to stash my mixed fermentation brett beers away for about 3 months before bottling. Allow more time for priming too.
I'd agree with dropping the candi sugar. 1kg of honey to 5.2kg of malt is enough. Even then it will be really dry with a single infusion at a low temp like that.
I found single infusions too thin on Belgian beers. Some people whack in some carapils or something to add a bit more body if they...
Poacher's Choice has damsons which aren't a mile off. That's a tasty drop. Also the plum porter as mentioned is pretty tasty.
I imagine they'd be pretty nice in a light beer too, maybe a dry Belgian blond / saison / wit base with a load of plums in.
