    Sorry and excuse my ignorance but why is it specifically that you cannot use large stainless steal pots? Is it not possible to get a large glass jar with a larger opening at the top?

    For most applications you want pure CO2 Nitrogen mixes are good for stout and a few other things but in general just go with the CO2.

    I have put a thermowell in the lid of my FV. I believe this is the most accurate way. However it dose require a little more attention when sanitizing.
