    Indeed basic sourdough recipe. Just scale it down a bit. Leave it in fridge overnight but works well even when done in morning. Absolutely lovely pizza base. Gives it a nice tang and lovely crunch. And after pizza is done the oven still hot enough to do some crumble or roast in :)

    Thank you. Wow 18%! A bit strong material for me- Total sugar 1100- about 14-15%? Hopefully that should be enough for it to keep for a year or more. Got some elder near by too, not ripe yet and might make both dried and fresh to see how they go. Been donated 6glass DJs and trying to fill them up :)

    Thank you Will keep that in mind, although red is now the only wine I buy as nothing really gets close. I run out of space so will have to give brewing a break (apart from country wines that take ages) :)
