    More or less at the moment yes, ive done one of my own recipies, an english bitter that was lovely but not bitter enough. Im still learning about different styles of beer and how to use different grains and hops.

    I did a beer kit with 1kg of honey and 500g of medium spraymalt, the honey wasnt that obvious just a subtle aftertaste. After a few months in the bottle the honey flavour was really obvious though, the hops had mellowed and allowed the sweetness to come through.

    a quick question

    you could use brown sugar if you wanted but priming sugar is a fairly small amount of the total brew so it wont make a massive flavour difference

    i would agree, use at least 500g of spraymalt with that kit using all sugar would produce a thin beer

    it should be fine if you leave it a few more days, is it a plastic type keg? Not a corny im guessing? I never had much luck with my king keg so ill let somebody else advise you on what to do with that, i have cornys now and loving it.

    bottle it mate, leave it 2 weeks in the warm and as long as you can in a cool place after, sure it will be fine, mine ended at at 1.010 aswell

    As a general rule i dont check anything until 2 weeks have gone by, then i take a hydro reading and see where im at. Try not to mess with it until its settled down, you will only risk infection. As for how long is too long generally longer than a week after fermentation has finished is longer...

    Just wondering could you do the same thing with a dry packet yeast, i know your not meant to do a starter with dry yeast but is it ok to grow it? If not ill have to wait until my next online order because my lhbs dont stock liquid yeasts anymore

    +1 for that, every brew behaves differently, i just forget about it for two weeks then open it up and take a hydro reading.

    What sugar did you add? Try and keep the temp lower if you want a cleaner taste, the coopers mexican cervesa uses a blend of ale and lager yeast i am told so keep it a bit cooler, im not sure about canadian blonde but i brewed that one with 1kg of light dme at about 18-20 and it was lovely.
