    I have the Youngs bucket type fermenters. I don't use airlocks as they are too tall for my fridge. They seal too well for me, if I don't crack the lid they bulge out a lot.     I read somewhere that he meant just white table sugar as breweries tend to use the cheapest option, it's basically to add alcohol in a more cost effective way than grain. As PerthRod says, it won't add anything to the flavour, in larger quantities it will thin it out a little (think mouthfeel)...

    My GF has never cut out, is it the fruit additions that are causing it? Surely the melon and raspberries would be better as a late addition to the boil? Why does mashing in at a low temperature cause stuff to stick to the bottom?

    AG, as I think you can see from this thread is way cheaper than kits, probably around half the cost, although you will have to take increased energy consumption into account. I could make mine even cheaper if I could be bothered to wash and reuse yeast. Hops are expensive, but I've got loads...

    The "best" for me is always the one in the fermenter 🤞. Sadly it turns out to be always the next one. I still make some good beers, and some I like enough to repeat, but always looking for the "one".
