I do two weeks in Primary then rack to secondary for further two weeks then bottle/keg,so far never had a problem.

I put bottles through dishwasher then use a bottle washer filled with Starsan then on bottle tree to drain then fill with stainless steel bottle filler,and find it quite enjoyable.

11g is fine
