    I think this is the issue for a 10l batch u really need either 12 or 13l capacity. I think mine has a 12l total capacity... so I guess I should ask about a 12-15 l total capacity fermenter - doh

    I think the raising of temp may have just caused it to go over temp. As I would have expected the beer to have changed over time - I still have a few bottles that I had recently. I think I need fo brew the same recipie a few times, changing only my process to work out what what's going on.

    I did use elmhurst for this, with the hoppy light profile that has a 258 bicarbonate (hco3). I guess I need to find out more about the use of the target profiles again.
