    Whilst out looking for rosehips I came across these little fellas.... can anyone tell me from the photo if these are sloe berries? I seem to think they are and wondering if there's enough to do something with them.. :wha:

    Dunno what I've done wrong but there's little to no fizz in this outcome. Followed all instructions to the latter. Should be ready to taste and it tastes quite ok. Just flat :cry:

    Get em cracked open boy. As a keen new to brewing hedgerow enthusiast, id love to know how the elderberry is. Hear a lot about keeping this berry wine for several years to age. Wjich is often easier said than done! So do tell once sampled please. You should have quite the opening ceremony too...

    Same thoughts here. Ive a few too sweet whites (school boy novice errors) so am in the process of making some neutral whites dry as hell and then gunna blend with the sweets. Hopefully they will be super though!

    Also have a question in temperature. ... My wines are clearing/ageing/maturing respectively in the garage. I have no place in the house such as cellar or anywhere cooler. We're blessed with mild weather currently but I wondered if the garage is still going to be an ok place come winter...

    Cool. So I'll rack it and adjust the sweetness accordingly. After a campden and potassium sorbate... Does this (potassium sorbate) need diluting in a little of the wine or adding straight to the demijohn? And at what quantity, teaspoon?

    Blackberries.

    Racked 2 demi's today. One has sultanas in the mix, the other just a straight blackberry. Reckon I haven't overloaded the sugar with these so high hopes with the little taste i encountered upon siphoning :D Is this best left 12 months or as a lighter fruit could it be sampled (drank) earlier?

    how long should you give a wine before going down the finings route? Ive got a dandelion, hawthorn blossom and elderflower doing their thing. Dandelion has cleared great. Elderflower getting there but less so with the hawthorn. All are roughly 3 to 4 months in... Ta :D

    I've not quite the weight required in the gift of the bag of Victoria plums. I have just found some damsons however on a little foraging expedition. Anyone know if it wouldn't be ok to combine the 2 varieties?
