    Stalled Saison - Advice please…

Turned out surprisingly well (with a few caveats)… The FG ended up at 1003 so about 8% abv rather than 6.7% intended. I never got around to bottling it but rather kept it in a pressurised Corni Keg and drank most at Christmas. It was similar to original style and very drinkable if a little hazy...

    Stalled Saison - Advice please…

Interestingly @Sadfield @JockyBrewer the DuPont website suggests they chill the fermentation to stop it and thereby retain some level of sugars before maturing. I guess the gravity then drops right down in the bottle…

    Stalled Saison - Advice please…

@Sadfield - I’m inclined to agree - It is a 19L batch and I used a liquid Wyeast 3724 yeast bag. It did inflate but not as much as other liquid yeasts I had used. It had been stored at the bottom of the fridge at 4C for about 8weeks. Where did you get the Gravity specs from? I found 2...

    Stalled Saison - Advice please…

An update if anyone is interested: After 17days, fermentation pretty much stopped with a Gravity of 1033 (OG=1062 & target is 1013ish), checked the yeast dump port and there was no yeast to dump. Decided enough was enough and pitched 11g dried Lallemand “Belle Saison”. Seems to be fermenting...

    Stalled Saison - Advice please…

After watching the YouTube video from @YeastFace I upped the temp to 30C and it has definitely picked up the pace!

    Stalled Saison - Advice please…

Thanks everyone for your informative posts 🙂 I’ve only really brewed traditional ales and IPAs previously, so was after a bit of reassurance. Time it is then!

    Stalled Saison - Advice please…

Thanks - Temperature is still 29C and fermenting in a Ss brew tech Conical FV. I notice there is no yeast floating on the surface and was wondering if it had settled down at the dump port…

    Stalled Saison - Advice please…

Thanks I will monitor gravity. The recipe recomended 27C and the wyeast3724 has a max recommended temp of 32C. I thought I might get more of those funky flavours at 29C.

    Stalled Saison - Advice please…

Hello - I have just tried my first Saison and everything was going so well… It’s a clone recipe for Saison DuPont using Wyeast-7423 which I brewed 5 days ago. I pitched the yeast at 26C with an OG=1062 and a day later it was going like the clappers at which point I turned the temperature up to...

    harveys sussex

This is my next brew as Harveys Best is definitely in my top-10 and plan to use the same recipe as above this time as an experiment (I tried a similar recipe last Christmas and chose not to use the Maize as that didn't sound very authentic and the result compared well with Harveys from a 5L...

    Freemasonry

The “Square and Compass in Worth Matravers” there’s a strange establishment. I stumbled on it 20 years ago and thought I was on the set of the “Wicker-Man”.

    Mick Dundee’s Kegerator Build

There are mixed reports but sounds like orders of £20-£30 are ok. I was reading on the forum https://www.thehomebrewforum.co.uk/threads/buying-on-ali-express.88524/post-928751 My feeling is you can get a lot for your money and lower value orders don’t hurt as much if they don’t turn up!

    Mick Dundee’s Kegerator Build

Agree! Reading some other posts it also makes sense to make small orders to risk import duty and daft delivery charges. athumb..

Wow - Just checked out AliExpress & wish I’d known about them 6months ago. I can see lots of “shiny” orders coming their way thumb.

First-Time try at Witbier didn’t go to plan.

Interesting - I have typically made bitters/IPA's previously and out of habit adjusted the pH in the mash to 5.2 (I just overdid it this time). Thanks - I think I may be getting confused with flaked wheat and being reliant on the diagnostic power of MO - here I used malted wheat. I guess I am...
