    Probably asking a daft question but do you have the spunding valve the right way around? The gas can only flow in one direction.

    Are you getting any carbonation out of your samples before checking the gravity? It might be still fermenting away but at 10 days I doubt it. Open the spunding valve right off, pull your PRV for a bit to let the high pressure out and then start tightening in the spunding valve to get the PSI...

    Seems another sensible way to get the temp down but it's the aeration I'm more worried about. For a Tripel would a good shake in the cube do the job? I haven't done one before but at 1.080 OG I'm assuming you need it fairly oxygenated.

    Fermented hot sauce

    Can I ask why you wouldn't boil it? I just made my first sauce (searched here for Xanthan gum because of it separating) and boiled mine. My understanding is that it stops the fermentation makes things much easier to blend and ensures its safe.

    Just had a quote for mine and it's about 35%+. Nothing has changed but another year's NCB. Paid my house insurance yester and it was almost double from last year. Times ain't great.

    Yes, force carb. I get that it's dregs, I just haven't seen it anywhere near as dark as that except for my stouts.
