Total beginner with 1 gallon IPA kit - activity in fermenter has increased suddenly after 2 weeks, why?

Try measuring with a hydrometer, if you have one. Refractometers don't work very well with alcohol present, it screws with the readings, regardless of the calibration. Refractometer before fermentation, hydrometer once it's started.

Not getting enough sharpness from keg/brew

I'm not sure, I use a soda stream bottle. If you were to use the 16G one I imagine you'd go through them like they were going out of fashion!

    NPi Brewday

When you say the gravity reading was post bottling do you mean you took it after you'd already added the priming sugar? The added sugar would cause a higher gravity reading and not represent the actual strength of the brew.

Not getting enough sharpness from keg/brew

No problem. I'm trying to burst carbonate. Basically setting the regulator as high as it will go and leaving it for a day or two. The reason it's more of an experiment is that all the burst carbonation charts are based on a 19L corny keg and being able to go up to 40psi. My sodastream regulator...

    BIAB setup

I usually hold back a few litres and add them back during the boil. I was exactly the same when I started back up again. I quickly realised that 10L into the fermenter doesn't translate to 10L finished beer. Aiming for 11 into the fermenter fixed that issue easily. If you haven't had a look at...

Bottle Conditioning / Carbonation for Salted Caramel Chocolate Milk Stout

Yep, no allowance for the cold crash. When I bottled I always primed based on fermentation temp and never had an issue and that included cold crashing for about a week.

Bottle Conditioning / Carbonation for Salted Caramel Chocolate Milk Stout

I'd wouldn't bother bringing the beer to room temp but i'd use the warmest temp the beer was at during fermentation in the calculator. If I fermented at 18C and then cold crashed at 3C then I'd put 18C in the calc. If you think about how long it takes to force carb using the low and slow...

    BIAB setup

I'm currently doing stovetop BIAB in a 19L stockpot. I aim for 11L into the fermenter which gives me about 10L of finished beer. The grain bill is typically around 3-3.5KG.

Not getting enough sharpness from keg/brew

I think that only applies to the other style of mini keg, like the kind you buy in the supermarket full of beer, not the kind you have. They cant take the same level of pressure. I've got a couple of the 10L Stainless kegs of the type you have and the soda stream bottle and I'm currently...

    Heineken blade

Probably, I've seen tutorials on refilling torps so it may not be so different. It's probably just a bottle with a plastic bag full of beer in it. My brother has a torps machine, hence the previous searching :) I'd get one and pull it apart to see what you are dealing with.

    Carbonating in the keg

I've got 2 of the 10L stainless mini kegs, similar to the ones from Dark Farm, and the mini regulator that takes a soda stream bottle and I can honestly say, they're brilliant. I force carb in the keg, no sugar needed. When I do eventually upgrade and get a full size gas bottle I can get an...
