Hi @Ajhutch For me, a little bit of Special B will always add a "Belgian" impression ... if you just chew on a few grains of it you'll see it's like a solid version of Leffe Brun, IMHO :?: ... you may want to consider adding a touch of that into the mix, just about 75-100g or so wink...

Hi @Dulwich North Another thing to check ... what were your FGs on those brews with poor heads? I ask because, when I first started AG brewing I had a few brews that ended up with higher attenuations, ending up at lower FGs, than expected ... while those beers seemed to taste fine they had...

Hi @Nicks90 Like @MickDundee suggests, hefeweizen is usually the "go-to" beer for quick turnarounds ... but for a variation on the theme, I'd suggest the Rye-Wit included in the set of session beer recipes over there (link) ... it's low ABV so won't need time to let too much alcohol flavour...

Hi All I mentioned earlier in the thread that I'd had the benefit of an impromptu brewery tour on one occasion when I'd been to Staffs Brewery and, in light of the passions showing themselves in the discussion above, I thought I'd share some of the info I gleaned, to give some context...
