    Would definately agree that even one tin is probably too much it gives it a slightly vinegary / acidic taste, i would say go with 1/2 tin at most, some nice ED spraymalt and do a minimash with a tray of toasted oats, roasted barley and some chocolate malt for a sweeter Oatmeal type stout :cheers:

    Yes mate it was 300. I am quickly learning that hefe is very temperamental. Is 380 much better than 300?? No more hefe brewing in July that's for sure!!

    Under the right (or wrong) conditions it is amazing how quickly yeasties can produce wonderful ethanol (and not wonderful methanol) in the first 24-48 hours of a active, healthy fermentation - you need to be careful with temps in order to keep the methanol at a low level

    I think that Coopers do a wheat beer kit - they definately do wheat malt extract so you could try a partial extract or mini-mash if you were feeling brave. Hallertau Hersbrucker hops are particularly nice in a wheat beer

    I would guess that at 28 degrees the pace of fermentation is not unusual, however you may get some weird tastes / fusel alcohols fermenting at such a high temperature. I would expect a beer such as this to finish at 1016-1020 so not too much further to go, however i would receommend leaving it...

    Could you put say a spoonfull of vwp in the dishwasher? i presume that the rinse mode would get rid of any remaining sanitiser??

    If you can spare the time it is definately worth doing the full lagering process, I generally do 4 weeks at 1-2 degrees whereby you will get a lot of the yeast dropped out but with just enough left for bottle conditioning

    Might be a silly question but would it be possible to chuck some ice cubes into the FV using frozen boiled water? okay it would water down the beer a little but would also bring the temps down
