Hi, As pitch rate affects the sourness of the beer, does anyone know if I should be using more packets of this yeast for bigger batches (or less for smaller batches), or if I should be sticking to two packs regardless of if i'm doing 5, 20 or 100 litres?

The recipe in the book says 4g salt total. The Sumac has 3% salt so 50g sumac should add 1.5g Salt bringing it up to the 4g advised.

Hey all. Got designs on infusing a gin with Pink Peppercorns, Lemon Zest, Bay Leaves and Cardamom. Anyone got any ideas on what amounts I should be using? Never infused a gin before. Probably gonna be infusing about 500ml.
