    Thanks @Poochops, I might have one more go at a quad this summer. I'll use your modified Candisyrup Rochefort-10 recipe, and add some carafa iii steepings if it is looking too pale. Plus extra yeast at bottling for carbonation?

    I didn't think it was clear in Morton's recipe wether to use candy sugar crystals or syrup. I used syrup. My quad feeds a bit thin, and absolutely no head, even with the carbed bottles.

    I bottled using swing tops for the first time a few weeks ago. I was amazed at the difference it made to bottling time. I think I'm going to phase out my capper and just use swing tops.

    I did a brew this weekend and was determined to find the cause of the grain bed collapse. Of course it all went smoothly, no grain bed collapse, and lovely clear wort into the boil. But thanks for the tip. I will definitely keep an eye on the seal on the top plate.

    Could it be something to do with the direction that my recirculation pipe points onto the top plate during the mash? Maybe washing away the grains under the top plate if pointing down too much and flow too fast??
