ashock1 flipping eck... My table beer feels hard done by compared to yours and I thought mine was complex.

    Coopers Irish Stout

I've used 200g of black treacle in a brew before, I found it to much. I've used soft brown sugar, either light or dark, depends on how much molasses flavour is wanted.

    Roasted cystal Malt

The page is a bit misleading. In the blurb on the page it lists Pale Ale, Amber and Crystal, with Challenger, First Gold and Fuggles. Warming, malty and fruity. Pale and amber malts contribute to a mouth-filling and satisfying Horlicks and biscuity maltiness. Challenger and First Gold give a...

    SMASH - good condition/mouthfeel/head

I know! The goldings fell in accidentally while I had my back turned.

    where to buy ??

I use three suppliers... #1. The Home Brew Shop... Free delivery and good prices on ingredients. #2. Brew UK... I like to use Warminster speciality grains, roasts and crystal. Brew UK have the full range from Warminster. #3. The Malt Miller... Anything the top two don't have.

    SMASH - good condition/mouthfeel/head

In the summer I like to brew a mild ale malt smash to around 4% ABV and 25 IBUs with fuggles and a little bit of goldings late in the boil.

    Lactose post fermentation?

To add.... Some breweries didn't add lactose for sweetness, they relied on high mash temp. and low attenuation.

    Lactose post fermentation?

In the past some breweries who sold milk/sweet stout would add lactose at racking. (bottling) to there normal stout. Obviously, this means you could split a batch of stout between dry or oatmeal stout and sweet stout.

    multi-rest mashing

A few things to throw into the pot... On the face of it step mashing from 65c to 72c does seem odd, but not unheard of. It's something I've seen a few times from Boddingtons aka from Barclay Perkins blog. As for mashing @ 72c, it does work as a mashing temp. but takes a while longer, it's...

Some help with water report would be nice...

Thanks @IainM and @Hoddy ... You have been very helpful. I will contact Thames Water and send a sample for testing. I already know what water adjustments I want, for style, grain bill, water quantity ect. But can't nail it down without Ca. I have an excel recipe calc. which works out all...

Some help with water report would be nice...

@IainM Thank you... So I use the larger Calcium Carbonate number... 40% of that gives me 138.4 Ca without adding in other calcium compounds. Seems I need to add some more calcium, but the water reprot doesn't list any. At a guess-imate, how much more Ca is needed?

Some help with water report would be nice...

I may be being a bit thick, so go gentle with me. I'm trying to get to grips with water chemistry and get away from bottled water. From various places I gather I need some basic parameters. But my water report doesn't have a value for Calcium (Ca), I seem to remember that Ca is 40% of CaCO3...

    Dry Jan - Sod off!

I'm really pissed off with you lot... Drinking and bonking through January, while I'm under medication and strict instructions not to drink and not exert myself. I've done two brews since Christmas, but not a drop can I have. I'm hoping to make up for it in February.

    Trub, trub, glorious trub...

I can't see anything wrong with your process. I don't filter anything from my boiler, everything gets chucked in the FV, but I end up with about an inch or two of trub when finished. The only time the trub is thicker is when I use leaf hops. I mostly use Wyeast London Ale III, which is highly...

    Victorian IPA

Thought I'd post up my latest brew. Have been slowly developing the recipe for several years now and is better each time. I even sent a bottle into the forum comp. last year with a 2nd place. Be careful if you brew up this beer, its very easy drinking and I find it easy to have one...

    Formative Years (beer)

1976 - Had a Light & Bitter, instead of school lunch... Same year I ran away from home... Walked from Essex to North Norfolk with a tent and a few pounds. Managed to get a ad-hock job in a pub for room and board + mild ale. Best job I've had. Worst pub I've ever been in though, the landlady...
