    edit: figured out it is made by Auron Does anyone know the manufacturer of the Brauheld Pro? We know Guten make the Mundschenk but they don't appear to have a model that looks like the Brauheld Pro (with its external pump). Btw Guten's VR show room is really cool!

    The Coopers Fermenter worked ok for a Mr Beer kit but when I tried to ferment an all-grain IPA in it I got really bad acetaldehyde which I believe is due to the lack of airlock / too much head space so I won't be using it again.

    That will help with mash pH but you still need acid for the sparge water to bring it below 6. Otherwise you'll get a grainy tannic astringent dry woody taste common in Scottish IPAs, eg Skye Brewing, Fyne Ales, Fierce, Overtone...I could go on...

    Astringency (I.e. polyhenol tannins) is most likely caused by not acidifying sparge water below 6 pH. Common flaw in most pale craft beer. Solve with pH meter and lactic acid.
