    Just wanted to say that if that hydro is in water, it appears to be at least 2 points out (possibly 4, although may just be the angle). To me that’s reading about 1.002-4. It should be read at the water line as you look straight through the trial jar, not at the raised circle of water directly...

    No and yes. A good proportion will be dormant yeast that’s settled out after doing its job. Hence why some go to the trouble of culturing up the dregs of commercial bottle conditioned beers.

    Sorry, me again. Just had a thought! How and how much are you carbonating? I’ve sometimes found highly/over carbonated bottled beers can easily throw settled yeast back into suspension when opened, particularly if not poured smoothly.     I never cold crash either, use only Irish moss (no other finings) and I don’t usually have a problem with beer pouring bright from the bottle (unless it’s a yeast drive style 😁 ). I am an AG brewer though, but I can’t see what difference that would make be at this stage of the process. Sorry...

If it tasted fine up to bottling, it could be either a bottle infection (in which case, other bottles might be fine) or possible skunking from sunlight (which shouldn’t be an issue if using amber bottles and storing somewhere dark).     Ok, that makes sense. Make the kit as usual but without the additional fermentables. I guess if you can find a kit somewhere in the 3.5% range (maybe a mild? I think you’d def need to look at a malt forward kit for this, and possibly dry hopping it) you might be able to get down to 1.5-2% ish. 🤷‍♂️
