    I tend to brew heavily till I've filled the garage about 500 bottles, then only very occasionally after that till most of its been drunk, takes about a year and stored well in the cool and dark I find them fine, they do change and do have a peak in flavour. Hoppy IPA though I'll drink first...

    Maltmiller put a year in the future best before date on my crushed to order recipes heat sealed into thick polythene bags, I'm happy with that I've brewed with 18month old malt recently and can't taste any different.

    Christmas beer count down

    Punkish IPA, Brixton Porter, foreign extra stout, black IPA, bottled and a cream Ale in the fermenter to bottle next week. Over 220 bottles of fresh beer should see us right. Plus there's about 50 rochefort 10 clone brewed in January and a similar number of Ris brewed in the middle of last year...

    Me too! Been 3 weeks in the garage after 2 weeks indoors carbonating, it's very very good indeed and better than current punk in the shops IMHO.

    Same FV for me with a kolsch, I do transfer dry hopped brews because I'm never in a rush and I prefer minimal sediment in my bottles, I don't keg, no room indoors for storage.

    When to bottle

    I'd bottle at the weekend personally or the week after in the evening depending if I cant be bothered on the weekend! Then two weeks at room temp and two in the cool and it'll be about ready to drink.

    Did this one today using a 5kg of year old Maris otter I bought just for the purpose of doing a recipe with the store cupboard speciality malts and freezer drawer hops, all about 18months old themselves. Decided to mash low at 63 degrees because I want this quite dry, it seemed to do the trick...
