    That's great! Thanks for your suggestions. The issue of adding oxygen hadn't occurred to me - I thought that only became a problem if oxygen was introduced prior to bottling. I presumed if it was introduced while in the FV it would simply 'float out'.

    Strongly recommend this group - I started brewing back in September and have been to their meetings 3-4 times since. They're absolutely great, loads of inspiration, tastings and practical lectures. I even plan my holidays to avoid clashing with their meetings now :)

    Beer tasting/appreciation books

    I can recommend this book. I was somewhat blind to craft type beers and this gave me a good grounding of the types, flavours, science and ways of tasting. It's a little basic perhaps but a good stepping stone onto more detailed books which I'm sure others can recommend.

    Central London drinking water - I read a few threads on it and it's not terrible for brewing with. I use Campden to kill off the chlorine.     They were given a very good soaking for maybe 20min in 1/2oz of Star San diluted in 2-3 gallons of warm water then dried over a radiator for an hour before bottling.

    Most of my stuff is DIY but I think building my own wort chiller could be a step too far (I'm a bit of a perfectionist and would like something neat looking). Has anyone bought a wort chiller from grayone2013 on eBay? The prices are good (only £10 or so more than I could make one for myself)...
