A week or two is fine normally, I have due to laziness left mine for longer - in theory, it's all still sterile....but the longer you leave it the greater the risk...get it packaged now I would say.

Patience is the first thing to learn, and the hardest. Leave that demijohn alone until the bubbles stop!

It's probably finished fermenting by now...have you taken hydrometer readings ? 3 days of the same reading means it's done. Or no airlock movement.

Go straight for the razorback - the only thing to relearn is patience!

In short -yes- as long as fermentation is finished you will need to carbonate with sugar.

From memory, I think there's 2 packs - one goes in at start of fermentation, and the other goes in about 3-5 days before kegging. I think they provide hop socks to keep it all together too. Good kits.
