    Thanks for the input..iv got a batch that’s in FV that’s good to go, so il transfer it to the keg and get the temp down. It’s an ale so what u say 3-4psi for that ?

    I usually buy in bulk when there’s a bargain to be had (Also a Yorkshire man) !. Iv used yeast up to three years outta date and it’s just been stored at room temperature with no problems 🤷🏼‍♂️

    I do my London pride clone this way. Prime my pressure barrel and a week later it’s spot on. It lasts for months, the first couple of pints are a little lively but then pours perfectly.

    Rack in when ur ready to bottle,, along with your priming sugar ( put ur sugar in saucepan with a little water and bring to boil) . 👍🏽

    FG sounds about right but 12’c is very low temp for ale yeast. If u can bring it inside and warm it up be best to leave for another week. Hydrometer’s in cold wort can give u a false reading, and tbh 5 days at 12’c I can’t see it eating through the sugars that quickly.

    I’m not sure if coopers use Lager yeast or ale yeast, I’d think it’s the latter, so at 17’c it will be on the cooler side for an ale yeast . I wouldn’t worry too much just let it do its thing

    I always use Erythritol sweetener.. I honestly can’t tell the difference between this and sugar and it’s 100% natural so you won’t get the green apple splatters if you’re having a session. 💩

    If your not a purist try the Lallemand NovaLagar yeast.. it goes like a rocket and bottoms out after 4 days at 21’c.. Clean taste, makes for a pretty good quick lager.

    If its an English ale why don’t you bottle it just before the yeast clears up all the remaining sugars.. I never bottle prime my ales and they usually pour perfect..you’d be surprised how much sugar remains after u reach your target FG.

    That’s how I started my bottle collection. But one thing I’d say about the plastic PET bottles, they are excellent for IPA’s They allow you to squeeze the sides bringing the beer to the top of the rim then screw the top on.. this expels all the air which in turn stops the beer loosing its hop...

    I’d get a degassing wand or make one.. these fit to a drill and stir vigorously but do not introduce oxygen.. I’d really stay away from shaking the demijohn,, like u mention introducing oxygen is not cool . This is what I made , old curtain blind rod with some zip ties,, works a treat
