    Cali Common. Only 4 weeks old and really nice. Impressed with the cml Cali common yeast. Dropped crystal clear after two day’s conditioning.

    22l Galaxy Pale Ale Schoolboy error. Didn't account for the extra absorbtion of leaf hops asad1 and ended up 1ltr short. Total 18632

    Galaxy Pale Ale boiling away as I type. Could only get leaf, no pellets available at CML. Loving the Galaxy lately.

    Why the obsession with sterilizing?

    I’ve done the same many times. I mark the bottles I haven’t sanitised with a small rubber band on the neck. Never been any difference between the bottles, but there’s no way I would take the chance on just washing the whole batch. The pain of 23l of spoiled beer is too great.

    Alas not Brian. It was in spoons in Ormskirk. A lovely pint it was too. It was followed by some nice Salopian in Tap Room 12. A good night was had.

    The sockets on the Inkbirds are shuttered. athumb.. The shutter is transparent though. If you look closely at the photo Harry has linked to you can just make them out. Made me check though.

    If you don’t have a trial jar for your sample you should get one. You only need a small amount for the sample then.

    You just need to take enough out to cool for the sample, no need to cool the whole of your wort. Sorry if I didn't make that clear. I just use a pyrex jug to take enough out of the pre boil wort to use as a sample. As @the_quick says you can use a temperature adjustment. At 65c though I doubt it...

    Most hydrometers are calibrated to give an accurate reading @ 20c. So you should use the 1051 reading, assuming your fermentation temp is around 20c. When you are taking a pre boil gravity, let the wort for the sample cool to 20c first. I personally wouldn't put my hydrometer in 85c wort for...

    Fermented hot sauce

    Just processed my second batch. A scotch bonnet and mango creation. Managed to leave this one for 23 days. Very hot as expected with a bit of sweetness from the mango (not much though). Might add a bit of tomato purée to make it a bit sweeter.

    I just use plain sugar with a measuring spoon and a funnel. I'ts the easiest part of bottling and only takes a few minutes for a 23l brew.     Last night Peerless Galaxian. Hardly ever see Galaxy hopped ales in pubs. Was well pleased to see this in the local boozer last night. Super smooth and just right for my taste at 5%.
