2kw sounds a little low to me. I expect you will also have quite a sizeable pan on top as well weighing c.30kg so could do with something a bit sturdier.

Good question. I don't think it needs a step mash but I do anyway and get good results with the following schedule:
20min @ 50C
40min @ 60C
40min @ 70C
Yeah definitely. They were mostly american hops (Citra, Simcoe, Centennial, Mosaic, Chinook, Columbus) with some Nelson thrown in as well.

Got the hops from Brewdog themselves. Met one of their brewers at a tasting session recently and told him I was a home brewer. He posted me a selection of their hops foc. 2kg in total very gratefully received :grin:

Yes, I've had buckets that used to be ok but now aren't airtight. I think when you lift it by the handle when full of liquid it kinks the rim slightly.
The lids often leak on those plastic fermenters. The gas is probably finding it easier to squeeze out of the lid seal than to push up the liquid in the airlock. Have you taken a hydrometer reading?
