Yes, it must be quite an effort keeping track of the smaller back-of-pub breweries, particularly when you can't "inspect" them in person!

Not sure what you mean by that, but I don't doubt your local knowledge. My spot checks indicated the data had been updated within the last couple of years and it answered my own curiosity about the Hardknott's recent disappeaance.

Drunken Monk Quadrupel - NHC Gold Medal

Thank you, and more Googling for me. Not sure the hochkurz idea translates easily into my stock pan setup!

Drunken Monk Quadrupel - NHC Gold Medal

Do you mind explaining the logic behind the cane vs candi sugar 2:1 ratio? You also made a comment about increasing the sugar. By a lot?

Yes, my local, and good local knowledge using that name. I didn't know Dulwich at all but met up with a friend for a pint in the Dog before a gig in Brixton (Lloyd Cole). One Sunday morning a few months later I'd decided buying in W London was too expensive and thought I'd explore the area...

Drunken Monk Quadrupel - NHC Gold Medal

Thank you, glad you've not lost interest in the thread! OK, I've had to google "cold steep" but my local home brew does Carafa special in small quantities so I will go that way. Noted. I was already reviewing my bottling "strategy" and might get some 500ml swing tops (my 700s seem big for...

Drunken Monk Quadrupel - NHC Gold Medal

Assuming no-one minds, I'd like to revive this thread. Steve, I wonder if you had any more thoughts on this brew? I happen to have almost all the ingredients except: I've no Carafa Special and wondered if Black or Chocolate malt might be fine, if not giving quite the same colour (assume that's...

Then your best bets are the Hawkshead Brewery and the Drunken Duck (just remembered their brewery is called Barngates). You're also close to the Coniston Brewery and Beckstones Brewery in Millom. If you go round to Wasdale, there's the Strands Inn and brewery.

Which part of the Lakes? I know the North better but I'd second Hawkshead Brewery - I like their Red Ale. In that area, the Drunken Duck at Hawkshead does great food and brew their own ales. Tag Lag and Chesters are both worth a pint, and you can find their ales elsewhere around the region...

    Tap rooms near you!

Bullfinch Brewery & Tap would be my nomination. It's in a railway arch near Herne Hill and Brockwell Park in south London. In these difficult times, they never seem to leave you waiting at a Please Wait to be Seated sign, and on Saturday afternoon I just felt welcome - even behind masks. There...

Errata: Greg Hughes, Home Brew Beer (2019 edition)

Pages 24-25 are a table listing many malts. I'm a bit puzzled by how the column "Mash?" has crosses against a number of malts such as Chocolate Malt or Carapils. They're the ones after Candi Sugar, which I understand would not be mashed, so is this a copy and paste error?

Thanks. I've plenty of wheat but my small batches might leave enough citra.

Let's hope that's just from over-hopped beers and you don't need to get yourself tested!

Thanks, your post made me look at the recipe and see it would be a great way to use up some Citra I have available! Maybe I'll dry hop some, but how underhopped do you feel it was?

    Dunkelweizen + temperature

I'm wondering how to make best use of my small stock of hops and also thinking ahead to the colder months. I've noted some of my parameters/limitations in the signature below. Apart from liking Dunkelweizen in any case, I think that some (frozen) Saaz leaves left over from a 10L Tripel brew...

Scaling quantities - "liquor" and "makes" volumes

Thanks, that sounds like a plan. With this ale's long conditioning period coinciding with Christmas, I'm keen to get it going.

Scaling quantities - "liquor" and "makes" volumes

Thank you, both. That pre-boil logic makes sense. So assuming I still lose slightly more during boiling, is a slightly stronger beer the worst that can happen? I can live with that outcome. I've done a couple of 9L batches in the pan and will probably do that for this Tripel. As for brewing...
