How do you track your brews?

Also Excel, with 3 main tabs for diary-type entries, a master list which uses some formulae to extract key data like OG, and an inventory list. It also has tabs for ad hoc things like scaling a recipe or price comparisons. While I could also do something in WP or based on SQL database, I just...

    Hello from south east London

In SE London consider Waterintobeer in Brockley, a friendly shop with car parking nearby (I don't know if there are any other brewing shops left in London). For me the best thing is when you're missing one ingredient and can just nip round, but they can offer good advice, and they do have a...

Drunken Monk Quadrupel - NHC Gold Medal

I did want to go some way above your 8.7 but I doubt I have your control over the process! I'm calling it "Covid Killer (Q'est-ce que c'cest?)" and will open one at Christmas, but it would be nice to keep until it's safe to reunite with friends next year.

Drunken Monk Quadrupel - NHC Gold Medal

All my other swing tops are 700ml ;)

Drunken Monk Quadrupel - NHC Gold Medal

Just checked the fermentation bucket after 13 days and we're looking at 1.010, so 11.3%. I sampled a drop but only 5 minutes later I struggle to describe the taste other than very complex, not too sweet and with a noticable spiciness. I'll leave it a few days and then it'll go into 500ml swing...

British beers - flatness and head

There is already 5% wheat in a couple of these, and Carapils in one, so I don't feel the grain mix is to blame. I think this has pointed me to the answer. I didn't feel I was far away, as the PET bottles were nice and firm, sounded right when opened, and the beer wasn't flat but just not as...

British beers - flatness and head

Yes, that does sound like a good way forward.

British beers - flatness and head

Yes, enough. The storage cupboard is on an interior wall, near but not adjacent to the freezer, and I'm confident there's little temperature variation. I'm just going to have to wash the glasses and test with one of the earlier batch of ESB bottled 6 weeks ago.

British beers - flatness and head

Thanks, Terry, that's broadly reassuring. I've not studied my glasses but I reckon I have seen small bubbles. They're rinsed after washing with standard detergent in the sink with other crockery and glass, but I'll look at that aspect. The pitcher might be anther good test.

British beers - flatness and head

I feel dissatisfied with how my British-style beers are carbonating and forming a head. The PET bottles firm up within a week or so, and I don't rush to open them, the taste is good and the beers are drinkable, but they just don't have much of a head and carbonation is only just OK. The problem...

GH Dunkelweizen recipe - which "Munich" Malt?

Well, I've never heard the word "spunding" - so I guess that validates my comment about your "more precise approach"! From what I recall, once it got started the bubbling was very active, maybe the most of any of my dozen brews. I kept the FV in a cupboard which maintained a pretty-constant...

GH Dunkelweizen recipe - which "Munich" Malt?

As a historian by training, I am used to mulling over whatever original evidence I can find! Another thought is that with your more precise approach you may want to think about the beer's head. I didn't make a note of the priming sugar but I think I followed the dark lager priming suggestion on...

GH Dunkelweizen recipe - which "Munich" Malt?

By coincidence yesterday I spotted a couple of Dunkelweizens in my local Waitrose and "tested" them against my straight GH brew. I'm sure there will be a Waitrose near you in leafy Hertfordshire! For what it's worth, I preferred the slightly more bitter Weihenstephaner Hefeweizen Dunkel's taste...

Drunken Monk Quadrupel - NHC Gold Medal

OK, then I've got it into the FV, halving all your quantities apart from the cane sugar which I pushed up to 500g, and using the 2 hr / 90 minute timings. It hit an OG of 1.096 and looks like the end result should kill all known viruses! Thanks for your help.

Steve, what's the logic behind such a long mash time?

GH Dunkelweizen recipe - which "Munich" Malt?

I'd only just asked myself the same question! Same here.... Zum Wohl!

GH Dunkelweizen recipe - which "Munich" Malt?

Interestingly, I've just noticed that the Dark Wheat on the opposite page includes Biscuit and Carafa Special.

GH Dunkelweizen recipe - which "Munich" Malt?

I also did the GH DW with some regular wheat malt and felt it turned out lighter in colour and not quite as toasty as I remembered. Thinking ahead to my next try, I ordered the same Weyermann Dark Wheat. It's also on my mind to add some Carafa Special and some Aromatic and/or Biscuit, or maybe...
