    I don't do any kegging yet. Mainly because I brew 23l of something different every week and so have to (and like to) give a lot away. I currently have 17 different bottled beers in stock. That's one hell of a lot of cornies!

    In the original recipe there were no boil hops, just 4g of Simcoe and 4g of Ekuanot at flame out. I looked at a few other IPL recipes and the IBUs varied from 10 to 40+so I added 28 IBUs in the boil and added some Azacca in the FO and dry hop too. I think I'll dry hop, then transfer to a...

    It's a very small dry hop, even though I intend to add some more as it was VERY small! I think I'll add them in a bag during the last part of active fermentation and into the D rest. Then take them out for the cold conditioning.

    The latest from your man in Thailand. A new one on me, Chang lager is an old favourite but with coffee? In a lager? Crazy Thai, but it does work quite well. Maybe it's because we've done 75miles on the moped in the rain to the most northern point in Thailand and I'm gasping!
