    Time-wise, it depends what yeast you are using: I've had them finish in under a week, and had others still going at 21 days. You need to be patient, let it finish, then stick it somewhere cold for 24-48 hours which will help the yeast drop out. What yeast was it?

    We do the same, frying pans in self-catering kitchens are usually rubbish and the owners rarely replace them despite the small cost. Last place we stayed at had 3 frying pans, all knackered.

    +1 Why take the risk for the price of a bit more yeast? I've done over 250 brews but the ones I remember most were the early kits with 6g of yeast that didn't ferment out, I did have to chuck a few brews. Go for 12g.

If 6 then I wouldn't risk it and either get another6g or a full 12g packet, you really need 11/12g of yeast for a 23L brew or you risk a stuck fermentation, as you have pointed out.
