    I brewed a Mild 2 weeks ago, clone of Hop Back Old Master, bit strong for a Mild 1043 but a very nice beer, made it before. Bottling tomorrow hopefully.

    Which recipe for PJ did you use?     Water when using liquid malt extract

    Can you provide your recipe as it sounds like you are doing an Extract brew: liquid malt extract and hops? If so, you don't need to worry about pH: the 5.2-5.6 is to get the best out of the Mash. If you're not doing an All Grain brew with a mash it's not an issue.

    I just train them all. Works for me, been growing hops maybe 7 years, 3 varieties, and always have a good crop. One of the easiest things to grow: once they're in the ground, just let them get on with it :-)

    I feel the same unfortunately: no question about the top-quality ingredients at MM but they have just got so expensive, I scale my brews with 1kg DME and MM are £4/kg more expensive than some suppliers. I usually buy 6 or 7 at a time so that's £28 more just on DME, let alone other ingredients.

    Tried this one last weekend, a chef I hadn't seen before: one of the best so far, didn't put quite as much sugar in as he does and used my own regular curry gravy rather than his, came out great!

    Challenger hops.

    Challenger is my new favourite hop since I started growing them. Use them in lots of brews: pale ales, brown ales, stouts. A real simple one is 92% pale malt and 8% crystal, OG 1042-45, bitter to 27 IBU with a 40g 0min addition as it cools: lovely!

    And how much sugar was in each cube? I always prime with half a teaspoon of sugar per bottle and leave in the warm for 2 weeks, it works for me.

    Don't worry, everything is really late this year - only 1 of my 3 hops is poking through yet. We had hardly any sunshine in March with all the rain, even the grass hasn't grown: first time I can ever remember not cutting the grass is March. And all the other plants and veg are well behind.
