    Sparge question..

I think i do what does. That is, I have a covering for the mash tun made out of one-use BBQ thingys and then take jugs of water out of the boiler and pour it over. I try to keep the water level around an inch above the top of the grain bed and pour on and lauter out at the same time. This is...

    Greg Hughes recipes

I find that even in the UK version of the book that often from recipe to recipe you will see malts used interchangeably. Actually in the UK version the malt used in the Raspberry wheat and the kiwi weisse is listed as "Lager malt". I don't see this anywhere else in other recipes. If I were to...

    Greg Hughes recipes

I think all bar half a dozen of my brews have started out as an idea from either Palmer or Hughes, but almost always with some slight tweak, I rarely follow a recipe to the letter, even my first I had to swap some hops since I couldn't get them over here in Prague. I only use dry yeast so far...

Low OG two brews in a row

I stir whilst doughing in, to avoid any clumps. I never know if I stir enough or to much, or too much or too vigoruously....

Low OG two brews in a row

Sure, todays was: 2.8kg wheat 1kg pilsner 500g carapils 19L boil volume, 15l batch. (might be a little over 15). I was shooting for 65% efficiency which is my normal ballpark. and my boiler normally burns off 4l of a 19l boil.

Low OG two brews in a row

Hi there, A couple of weeks ago I brewed an American IPA (pale, carahell, carapils) and was aiming for about 65% efficiency (my norm) and an OG of 1.058. Instead it came out around 1.048-1.050. Strange I thought. I'm not saying I am an expert brewer but low OG is not normally an issue. I've...

    Greg Hughes American Wheat

I'm reluctant to order more than a kilo of pilsner malt as the left over will sit around for a while. But I could reduce the wheat to 2.5kg and add say Carapils or carahell (or a combo of the two) to make up the half kilo? I have some leftovers of them lying around and I'm more likely to re-use...

    Greg Hughes American Wheat

Sounds like that is the way to go then. Anyone used M-54 before and think it might go alright for this one? or just stick to US-05?

Will you drink in Wetherspoons when pubs re-open?

There is a Yoko Ono quote along these lines but I can't bloody find it now. Something like "As you get older you should take a step to the left every day, to counter the natural current to the right". I've probably got the words a bit wrong, but that is the sentiment of it.

    Greg Hughes American Wheat

I didn't think of that, just using a "normal" yeast. I always have some US-05 laying around and I also have a packet of MJ M-54 that I don't have any plans for.... You think the WB-06 "weiss" flavours will overpower the hop flavour?

    Adding Earl Grey

This is right up my street..... What sort of hops play nicely with Earl Grey?

    Greg Hughes American Wheat

Following my slightly disappointing brew evening last week with an Apollo/Galaxy American IPA but missed OG by almost 10 points which is very unusual as I can't work out why I have decided to change my planned brews and slot a new one in. I was looking at the GH American Wheat which is like...

Will you drink in Wetherspoons when pubs re-open?

I've never had a problem with eating/drinking in a 'spoons before, been in a fair few around. But I think I will be reluctant to use one after lockdown (if I am ever allowed back home to the UK!) following his response to COVID. I am from Norwich originally so we share the same hometown but it...

    Apollo/Galaxy APA

I use an app called brew shop so that calculate the efficiency, IBUs etc. I've never thought to question the accuracy of it! My Apollo is 17.2%! I've never had such "strong" hops.

    Apollo/Galaxy APA

Alright so what I actually did was something else completely, on a whim and based on a discussion I was reading about the benefit or lack thereof of late additions. I realised I hadnt stuck a 5 mins charge in a brew for 2 or 3 years so thought I'd give it a try and see if I see any benefit...

    Greg Hughes Belgian Beers

I brewed the Patersbier from GH so didn't want to see that ignored here as it is also known as an "enkel" or "single". I read somewhere that the monks originally made this beer by doing an extra sparge on an already sparged mash, hence its quite weak. I didn't do mine that way but it did come...

    Apollo/Galaxy APA

Just bumping this as brew day (or brew evening is tomorrow). The orginal hop schedule was this: Columbus 25g @60 Apollo 25g @15 Galaxy 25g @ 0 (all approximate weights until i put it in the computer thing). Then a dry hop of 1/3 Apollo to 2/3 Galaxy. Foxy suggested this: Columbus 25g @60...

    Apollo/Galaxy APA

I'm slowly getting my range of summer brews lined up. I've got a bohemian pilsner and a vienna lager lagering, a spring ale conditioning and now thinking of a stronger APA/IPA type beer. Quite pale though. Aiming for 19l boil/15l batch, my grain bill is: Pale malt 4kg Carahell 250g Carapils...
