    First NEIPA attempt

In recent brews I have been expanding my knowledge by using adjucts (vanilla, maple syrup, cocoa, candi sugar etc) and now I want to have a go at a brew with water adjustments. I want to try a NEIPA and have read a couple of really helpful posts on how to adjust for water and how the grain...

(was) Doppelbock (now) Czech Dark Lager with substitutions - thoughts please.

The only thing I'd say is that would be quite strong for a české černé pivo. That's around 14° plato and the standard Czech dark lager tends to be around 12°,having said that there are plenty of stronger ones. I'd also consider using Saaz for the late hop addition. I did a černé last year...

    American pale/IPA recipe

I'm reviving this old thread since I got distracted and brewed (amongst other things) an American Wheat, a Belgian Golden Strong and a maple coffee oatmeal imperial breakfast stout. But coming back to this idea. Now my hop stash is like this: 50g of Apollo and 40g each of Cascade and Wai-iti...

Oaty Maply Smoky Coffee Stout thingy

Also, just shopping for the maple syrup and can see grade A or C available. I am not sure if it would be significant issue for use in a beer?

Oaty Maply Smoky Coffee Stout thingy

Actually just realised I probably have only about 100g left of black malt.

Oaty Maply Smoky Coffee Stout thingy

Hi there, This weekend I plan to use several "adjuncts" in a brew for the first time. The furthest away from barley, hops and water I've ever gone before is adding oats, wheat or candied sugar.... :laugh8: Using my Oatmeal stout recipe as a base here is what I have so far: Target boil vol...

Greg Hughes Belgian golden strong ale

Thanks everyone, glad I asked as I kind of consider Sladek to basically be super-Saaz so didn't think it would be a big departure. What I could do is swap them round so the Sladek goes in at the start of the boil and the Saaz is the later addition? This way any flavour impact from the Sladek...

    Greg Hughes recipes

I have the 2013 edition, is the most recent edition significantly different to be worth picking up?

    Greg Hughes recipes

Me too, It has been on my list since day one I bought the book (over three years ago) but somehow it always gets overlooked! I am going to add a slight amount of Melanoidin to the mash though, at around 5%.

Greg Hughes Belgian golden strong ale

Hi there, I have suddenly decided to line this brew up next as it will allow me to use some of my stock of ingredients. The only thing I don't have is Tettnang hops. I do have some Sladek to use up so was wondering if they would be an acceptable substitute. They are a little bit higher alpha so...

    Sorachi Red IPA

Just going back to this thread. The Rye IPA I brewed was in my top 5 brews. @Mrhandsome how did yours go?

    Greg Hughes recipes

Living in Prague I was of course interested in both the Czech and Bohemian pilsners but both seemed to me to produce more of a German pilsner than Czech (less malty flavour but stronger abv generally). Given I am not going to bugger about with a diacetyl rest I add some Melanoidin to get a...

    Greg Hughes recipes

I've now had a chance to taste my second attempt at the Spring Beer, this one more or less exactly per recipe, but with US-05. its brilliant, really nice bitterness and quite fruity. It can be added to my list of best Hughes Brews....

Low OG two brews in a row

like at 15, 30, 45 mins give it a stir?sorry for being slow here but I literally never thought of it!

Low OG two brews in a row

Do you mean during the mash take the lid off and give it a stir? I've never done that.

    Sparge question..

Yes, thats the strange thing. I don't have great efficiency, around 64-65%, but it is consistent. Except the last two brews on the trot that have come in around 10 points down and I haven't consciously changed anything!

Low OG two brews in a row

I just realised I took a photo mid-sparge. I have had another theory. I looked back at a wheat beer I did a couple of years ago which came up really short too, I totally forgot about it. But its the only other time I have brewed with over 50% wheat. So now I am wondering, wheat being...
