    Volcano Beers / Gushers

One thing I don't think has been mentioned but may be relevant - if your beer has lots of sediment or hop particles then these bits can act as nucleation points around which carbon dioxide can come out of solution and form bubbles. If this is happening to you it might explain why the beer is not...

    Lactic Acid

Very interesting, thank you Jocky. I bought some citric to make cream ales etc but I do live in a very hard water area so I don't want to end up making alcoholic lemon juice... AMS it is I guess, or a combination perhaps. EDIT and thanks Hanglow. I have kind of heard of that process before but...

    Lactic Acid

Hate to derail but is there any reason not to use citric acid, either in this recipe or generally, if you don't want to add extra sulphates and chlorides?

Brew: The Fool proof Guide to Making Your Own Beer at Home

I've been brewing AG for four years now and I think this book is fantastic and I use it a lot. Not really for the technical stuff now - He knows his stuff, even though nothing he says is particularly ground-breaking, and I doubt he brews enough with other commitments to have really tested a lot...

    Hop spider or not?

Very elegant solution. I need to find a way to cold crash now my fermenters have outgrown my fermentation chamber. The simple solution is probably a bigger fermentation chamber!

    Hop spider or not?

How do you dry hop then, Foxy? Chuck em in loose?

    Hop spider or not?

Good advice before I try it for the first time. thank you!

    Kveik Resources

Sticking this on the list. If you follow the links you should get all approx 10 hours of the 2020 Norwegian farmhouse brewing festival organised (I think) and hosted by Lars Marius Garshol. There are several staggered brews by different brewers, as well as talks, interviews and Q&As. My wife and...

So. Who remembers Beer Festivals? Which/where was your last?

OK maybe this is cheating but my wife and I spent all of Saturday virtually attending this: https://www.norskkornolfestival.no/english/ An absolute must for anyone who is interested in Norwegian farmhouse brewing and kveik. It looks as if you can view the entire thing online now.

    Newbie

Welcome, Geffers! May I recommend James Morton's book 'Brew'? It contains a lot of useful info, even for kit brewing, and may give you some inspo if you want to go all-grain in the future (not that there is any need at all to do that, you can make fine beer with extract). If you stick with...

Lid on or off during boiling?

Looking at other things online, including the definition of the desired 'rolling boil' I think I'm not far off where I need to be in fact. I might dial it down towards 10% anyway. I just about see why a less vigorous boil would require a higher malt bill - if you're not boiling to concentrate...

Lid on or off during boiling?

Great idea! Please report back with efficiencies etc

Lid on or off during boiling?

I might be able to but it would mean making a new condenser hat for my BK. Worth looking into certainly. Looking at this thread, I think what's telling is the suggestion that I should be looking at about a 4% boil-off rate per hour. I'm up at 13% at the moment. Maybe my interpretation of what is...

    Hop spider or not?

You could always put one of these in your system. Then you could chuck hops in loose and not worry about them blocking the pump or making their way into the FV: Brew Builder. They're not cheap for what they are but this is probably the same sort of thing...

Lid on or off during boiling?

Ah, yes, I misread, I see now. OK well either works just as well from a practical standpoint I suppose. Cheers!

    Hop spider or not?

I use them for convenience but I'm convinced there is a drop-off in hop character compared to muslin bags etc. I make sure I give them a good stir in the BK, and occasionally in the fementer, which I know isn't ideal due to oxidation risk!

Lid on or off during boiling?

Outstanding, thanks for this. I have a 550m³/hr extractor fan and a very short, pretty well-insulated duct run but I still have some problems with condensation on a cold day with a vigorous boil (5.5KW element). I have been wondering if there are ways to reduce the amount of steam produced by...

    S-04 under-attenuating for dark beers

Cheers, good advice. I always give non-kveik beers a fortnight but there is something in the combo of 04 and dark malts which takes a little longer for me. I'd certainly rather give the beer another week in primary and have well-carbonated beer.

    S-04 under-attenuating for dark beers

All my very dark beers seem to finish a bit high and I tend to use S04 for nearly all of them. It can lead to problems with bottle conditioning because those last couple of gravity points do end up getting chewed through eventually, leading to some rather fizzy beers! I don't know if it's the...
