    It might be worth waiting for a second pour directly after the first as the tap will be warm to start with, causing the CO2 to come out of solution. The beer will cool the tap down.

    I would go with adding some of the dark de-husked malts such as Cara 3, Midnight Wheat or Black Prinz. They can be added to the mash but can also be used as a cold steep. I use these for my Black IPA where I need the colour but not the roastiness. I find a 30 minute steep works best.

    Usually about 3 days if I am in a hurry. Again it is dependent on how often you turn on the gas. I often leave it a bit longer to settle. I have never used the rolling technique as I don't want to get beer in the gas-in tube, one bit less to clean out.

    I would take a trip down your local pub/supermarket/beer shop and buy a few pints/cans/bottles of different styles. There are loads to choose from nowadays and you should find some you like without having 40 pints of one you don't like. You can then buy a suitable kit or AG recipe.

    It will be fine as the head space will be a CO2 atmosphere. But just bear in mind it will carb up quicker as there is more head space.

    Before buying that part check the condition of the piston shaft. Mine was badly scored so would not have sealed even with the new gland. I ended up having to get a complete new cylinder and piston assembly.

    I'll kick things of with a Festive Fireside Ale. A lovely dark beer with a hint of Christmas spice. Crystal clear with a cracking head. Really enjoyed this and :hat:to the brewer. (only problem was it disappeared too quickly :onechug:)
