    Currently drinking a faux pilsner with Maris Otter extra pale and Saaz. I used a kveik yeast called Ubbe, which isn't what I expected but I would definitely make this again using a different yeast as all in all its enjoyable.

    Been caught out by this when I first started doing all grain kits. Bought a 5 gallon American kit and made it to British gallon measurements. Thought my efficiency was way off but I'd just added way too much water!

    Gave some kveik pilsner and kveik NEIPA away as gifts so I made labels for them. The writing on the NEIPA was a bit dark so I went over it with a white paint marker (looks like tip ex though). Looks a bit naff but never mind!

    There's no need to hold it at 80c, you just want to be under 80c so I wait until it gets there, then put the hops in and continue chilling (or not if I'm doing no chill). My last one had 250g total whirlpool hops added at 80c then no chilled. Another 250g added at day 2. I had a similar issue...

    I used to have a cold smoker, it was a cardboard box with a tin full of smoking chips with a soldering iron in them. It did the job but was a lot more dangerous and ineffective as this (I expect). Definitely giving this a go though!

    Sounds pretty good to me. Some yeast nutrient would have been good if you have any but the champagne yeast should be ok. Have you made anything similar before? It will be very dry, you might want to find a way to backsweeten or add some sugar syrup at serving.
