There is nothing stopping you from using a kit for your base and doing a partial mini mash or even a grain steep with some dark grains.
You may also need to do a hop tea as well to get the flavour you want.
But allow for several attempts while you experiment & work out what's best for you
I don't think I'm a super taster.
But if you are looking at All Grain brewing, you could reduce your losses by experimenting with 1 gallon small (stovetop) brews until you work out what works for you.
Use the search function to look up "small batch" and/or "stovetop".
I leave the last cm in the bottle along with the sediment when I pour it too.
With wheat beer I will pour it all, but I won't deliberately swirl the entire sediment in, so you get some yeast haze, but not soup.
When you started, the packaging should have said what the sugar content was.
You add all that up, then work out how much extra sugar to add like what chippy said.
If you add neat sugar from the packet now, be careful & add slowly & stir, because if fermentation has started you won't want a foam...
Do you already have a glycol chiller? What you linked is just an adapter to connect one to the cooling coil, not a complete cooling system.
