    I've added a handful of Kaffir Lime Leaves at 5min left in the boil, along with using Sorachi Ace, was a great beer, finishes real dry with Saison yeast.

    I have recently brewed a double IPA , its gone from 1.070 to 1.012 in just two days, sample taken today because I can’t see any airlock activity. Two packs of CML Kentucky, fermented under the stairs so at approximately 20°c. That’s the fastest fermentation I’ve ever seen.

    Yep that's why I fancied bottling so I can leave them for different periods of time to see how ageing improves it, plus I don't want to put a keg out of actions for months.

    That makes sense, I do keep a supply of DME to hand as with bigger beers efficiency suffers and I often add a bit to hit the expected OG

    Mash schedule was:- Protein Rest 55c for 10mins 60mins at 65c 10mins 75c mashout then onto the boil
