    So the brew is on (early morning mashing) - I've spoken to a brewer friend and will drop the dry hops - and see how it tastes without them - this is also my first lager I've done at 62c mash - I normally do everything around 65-67c - interested to see how it turns out and if it is any different!

    And this is how I carb my beer - but most people use the traditional 'slow' method. After making fizzy water for the last 4 years I can guarantee there is no difference in flavour of the water if I slow carb it or burst carb it - so I always go burst.
