It looks like they pack all the individual malts in separate bags. You could divide them up for two smaller batches.

Fair comment, but when it was published nearly 30 years ago we home brewers didn't have nearly the range of yeasts available in the UK today.

It won't make it go flat but the pressure will reduce as the CO2 in the headspace will start to become dissolved in the beer at lower temperatures.

These are the kegland parts you need. Grey and red for gas black and yellow for beer. If you're using a threaded disconnect you'll need a quarter mfl to 5/16 push fit adapter.

I didn't see a flow control disconnect in any of your pictures. They are taller than the standard disconnect.
