    Yes it's extremely cheap and nothing to fear. A little phosphoric acid wouldn't harm fermentation. A lot of us use phosphoric acid in water treatment.

    At this stage I wouldn't be shaking. You haven't fermented under pressure so there won't be an excessive amount of gas dissolved. I would bite the bullet and purge the head space with CO2 from your cylinder, it won't take much and you don't want to risk oxidizing at this stage.

    I use the inkbird to control temperature with the probe on the outside of the fermenter and the rapt pill (not the controller) to monitor temperature and gravity. I ferment inside a converted freezer.

    I used to put the probe in a thermowell inside the fermenter. But since I started using a Keglands Rapt Pill I found that I get a more stable temperature by taping the inkbird probe to the outside of the fermenter.

    I don't believe you have a pressure fermenter. I've used fermentation gas during pressurized fermentation to purge kegs filled with sanitizer. Then do a closed transfer oxygen free. Pressure fermentation is another rabbit hole to go down. 😂

    I wasn't referring to serving pressure. I was referring to the level of carbonation achieved when carbonating at 20 degrees c and 30 PSI. As an example.

    That's what I do, and I never use priming sugars or force carbonate post fermentation. I always try use spunding to achieve full carbonation to my required level during the latter stages of fermentation.

    Why would you over carbonate the beer if you've got a spunding valve?? Yes, over prime to compensate for the excessive head space but set the spunding to the correct pressure for the temperature and target vol of CO2. ie about 7 to 8psi at 20°c for about 1.2 vol, Ideal for an ordinary bitter.

    You use the spunding valve to stop you over carbonating. Not to remove carbonation after overdoing it !

    30 PSI at 20°c will carbonate to 2.65 vol (a gassy lager level).
