    I reckon most of the Abbey/Belgian/Trappist yeasts will get you in the right area. T-58 probably isn't a bad call, Jamil uses WLP500 (Chimay) in his version, CSi use WLP570 (Duvel) in theirs which is probably what I'd go for.

    It's something that is created when a chemical found in malts, particularly lighter malts, breaks down during the boil. To make sure it's removed, a vigorous boil for a decent duration is really all that's needed, and this is more important when using pils malt as a base.

    This is one of my favourite facts: the word "helicopter" is made from two separate words, but not "heli" and "copter" as you might expect. It comes from the combination of "helico" meaning spiral (as in helical) and "pter" from Greek meaning wing (as in pterosaur).

    That's interesting, thanks for the further info. I've often seen DMS described as a creamed corn aroma but I have no clue what that's like, to me it's like tomato soup or ketchup which sounds terrible but it's not too bad in a lager actually.

    This in itself doesn't preclude time travel. I believe that many of the proposed, theoretically possible methods have a fundamental limitation in that you couldn't travel back to any point before the "machine" was built, which would explain why we haven't yet had a visitor from the future.
